This is a new book that I knew nothing about until I saw it in the new releases tonight. The author is from cupcakesandkale.ca. I was unfamiliar with that as well. The premise is adding green vegetables to every meal of the day, including desserts. Most of the recipes have short and simple ingredients lists, gluten-free recipes are marked, and nutritional information is provided.

I ran home and made the white bean and three-green soup. I love blended bean soups, so this was a hit with me. From start to finish, it took under a half hour.

I also made a variation of the cabbage strudel recipe to use up a few lingering filo sheets. I remember hearing about cabbage being substituted when people couldn't afford apples, so I was intrigued. I made the filling according to the recipe but instead of a rolled strudel, I made little packets. I have a lot of filling left over and I'll probably eat it for breakfast. It's so much better than it sounds.

Other recipes I want to try:
Pesto polenta w/ spicy aioli
Spicy garlic bok choy
Samosa burritos
Kale and kabocha enchiladas verde
Triple chocolate beet greens cake

I made the white bean soup again. I replaced the collards and spinach with kale this time and it was just as good. I also made the French lentils with asparagus and shallots. It was kind of blah so I added a lot of fresh thyme to give it some flavor. Finally, I made the pesto polenta fries. It was another quick and simple recipe that came out looking and tasting like something that involved a lot more effort. I think I may make another batch and cut them into cubes to use as croutons. I didn't go through with the aioli because the new jar of Just Mayo that I just opened tasted off and I was too lazy to make my own.

I have liked the broccoli, hummus and sweet potato dish the most.

The broccoli quiche was ok - better with salsa.
The spinach gomae was surprisingly filling.
The tofu paneer dish was a bit tame for my liking but still good.

This book sounds very interesting. I'm intrigued by the cabbage strudel.

I grabbed this book from the library and was pleasantly surprised by it. I immediately made the Kale and Herb cornbread muffins. They were so quick to put together and so tasty. I was shocked how much the husband loved them. I added extra kale (why not) and a nice pinch of red chili flakes. They went perfect with a bowl of soup I made. I will add these to the regular rotation perhaps adding in more chili and even corn the next time around.

Next up is the Mexican Tortilla Soup since I just bought a bunch of dried ancho chilis. I want to try one of the desserts too, perhaps the chocolate spinach brownies.

I just bought this book and wow! What a great book! The recipes are whole-foods, simple, and innovative. Last night I made the Broccoli and Greens Quiche...it was the best ever! I loved that it wasn't tofu-based. Rather, it was a simple recipe that was based off of chickpea flour. It was creamy and delicious...I haven't had a quiche for years and it tasted even better than what I remember. I'm looking forward to cooking my way through this book.
