So I bought this cookbook today by Madhur Jaffrey and it's huge! I don't want it to sit there like How to Cook Everything.. . does so I was hoping that some of you had tried and tested some recipes and have some input on what I should start with.

You should look at Vegan Eats and Treats. She has been cooking a lot from it this month and it's why I bought it. I've only had it a few weeks but I've made 2 things - the greek split pea puree thing and the mushrooms in coriander thing and served them together with flatbroad and tzatziki and it was an excellent meal.

I've used it lots and there are very few that I didn't like. If you eat lots of beans and greens then this is the book for you. I've especially enjoyed anything Indian or Tinidadian. I don't have the book with me or I would list some of the stand outs. The main one I can think of is Nigerian Baked Beans.
If you do buy the book, I recommend you take notes in it. I didn't do that and I would later go back to find a recipe I loved and was unable to figure out which one it was. There are just so many recipes in there.

Chickpea and Potato Curry, Caribbean Style (this has got to be my favorite thing ever) Red Kidney Beans for Jamaican "Peas and Rice" (so simple and delicious, I usually use only one can of coconut milk and replace the rest with water) Androche Markidis' Lentils with Rice Chickpea Flour Pizza

Some of my favourites are the Sri Lankan green bean curry, Dhansak (I think the main heading is something involving mixed split lentils in the Parsi style), masoor dal soup, the tofu spread with walnuts and peppers in the salad section, red lentils and zucchini (dalcha, I believe), chickpea pizza, chickpea pancakes, tofu with mushrooms, broccoli with walnut sauce, sweet and sour cabbage with orange marmalade, all the recipes involving corn and tomatoes, the spicier of the two sweet potato recipes (I think it's the second in the section) and a lot of other recipes I'm probably forgetting. I didn't like the stuffed peppers, but I think it was the parsley in the rice filling that I couldn't handle. I love Chickpeas and Chana Dal Cooked Together in a Mint Sauce. The first time I made it I followed the recipe, but the second time I made it I used canned chickpeas and tomatoes. It was much easier and just as good.

The mister and I are BIG fans of World Vegetarian! It's the book that finally taught me how to cook Indian food, along with a bunch of other good stuff.
Try out any of the dal recipes. They're all good, and after you make a couple you'll realize that they more or less boil down to the same thing: some type of dal + a tarka of your choice.
Garlic-Ginger Bean Curd... best super fast super impossible to mess up tofu recipe ever.
Her flatbreads are pretty good.
The cold swiss chard salad (Young Swiss Chard With Sesame Seeds maybe?) is one of my favorite simple lunch sides.
I could really keep going for a long time about this.

I loooooove this book. It has one of my favorite recipes ever in it - Crumbled Potatoes and Peas, aka Aloo Matar. I made it tonight, in fact. So good.

I've been lusting after this book for ages and finally decided I could afford the soft cover since I found it gently used. I intend on reading it cover to cover and definitely jumping into some of the recipes (the South Indian recipes, pickles, sauces, spice blends, and bean recipes are the most exciting to me at first glance). Does anyone have any absolute favorites from this book?
If I had any sort of discipline, I'd aim to cook my way through the whole book, veganizing everything that needs it.

But after you make the spice mix it's dead simple. I finally got around to making this and am eating it right now. It is indeed awesome. I was out of non-staple ingredients, so this was perfect. I don't mind spice mixes, since my immersion blender has a mini-processor attachment that works well for this sort of thing.

I really, really need to get this book. I have been collecting indian spices so I can start making indian recipes as written instead of just leaving certain things out and subbing spice mixes.

I think it's good book when you can't think of anything to do with a certain vegetable. If you have a well stocked spice rack, you can often just pick a recipe without needing to buy lots of extra ingredients.

This book was one of my very first vegetarian cookbooks! The Nigerian Kidney Bean Stew is stellar, uses mostly staples, and super easy. It's one of my standbys for when I'm almost out of food.
I also love the Punjabi Potatoes (I usually add chickpeas and peas) and her mujadarrah recipe.
