Ok, so the directions say to add 1 cup veg broth and bring it to a boil and then cook for 40 mins. 1 cup does not even cover 1/3 of the pot with all of the eggplant, and so the moisture is gone and food is starting to stick to the bottom of the pan. Any ideas on what I might be doing wrong?

Huh. I've made it a few times, and I never had that problem. Did you cover your pot? I always found that as the eggplant and tomatoes broke down, it was plenty saucy enough to not stick.

Also, it should be a pretty low boil, not rapid or anything. Maybe more like a simmer.

Ok, I ended up taking it off the stove way early. I feel like 1 cup wasn't enough, so I just reduced the heat and it was done way before the 40 mins. It's really delicious!!

Yeah, when I made it the broth didn't completely cover the eggplant, but I covered the pot so it had sort of a steaming effect.
