Can anyone recommend a cookbook that has them? Viva Vegan or Vegan Fire and Spice, maybe?

My family and I love a particular Columbian and Cuban restaurant in Philadelphia, and I would like to replicate some of their dishes and veganize some others if I can.

Viva Vegan has some - the Columbian Red Beans spring to mind, and the Cubano Vegano SAndwich or whatever it is exactly called.

Viva Vegan has quite a bit! The arepas are so good and the Cuban variation of the shredded seitan Ropja Vieja is one of the best vegan meat dishes I have ever had. I think everything I have tried from that book has been super great. If you go to Amazon you can use the "look inside"feature and see the whole table of contents.

I don't know about the cookbooks, but a great vegan plate of cuban food in my mind is:

Cuban-style black beans and rice with yucca or plantains.

Here's a good yucca recipe:

And people with argue to death how Cuban black beans should be done, but in my family, we always use about 1/4 of a cubed green bell pepper per can of black beans, one bay leaf, some sofrito or tomato sauce, onion and garlic, and a pinch of cumin.

i just got viva vegan! and i feel lame for waiting so long to jump on the bandwagon with this one
tons of tasty, flavor filled and not too difficult recipes. totally recommend it
i'm making the vegan cuban sandwhich today for lunch
