I've been ogling this recipe for awhile but I didn't have a food processor so I could only dream. Now I have one, but it's a large model so I would have to make a double recipe.
My question is: how long will this stuff keep in the fridge? it would probably take me quite awhile to go through all that mayo, and I hate wasting food.
also: does this stuff resemble the storebought Miso Mayo I know and love? I'm sure this recipe is delicious either way, but if I can find a low-fat homemade facsimile of that product I will be on cloud nine.

It lasts for about a week. The Miso Mayo has a lot of fat, so if you wanted it to compare you'd need to add oil.

Oh noooooooo, I can't use up all that mayo in a week. I figured it might last longer because all the ingredients last a long time, but I guess it doesn't work that way. I wonder if it freezes well?

I definitely had mine in the fridge for two weeks before I finished it & it was fine but I pay to attention to expiration dates!
