I am tasked with preparing a bunch of cookie desserts for a baby shower. This is after one of my roommates found my VCIYCJ book and begged me to make "Magical Coconut Bars."
I'm not overly enthralled by this choice, so what else would you recommend I make to accompany the coconut bars?

You should be enthralled about the magical bars! They're amazing.
One of my other favorite recipes in the book is the pecan bars, but that's two intense recipes for you. Something simpler would be the carrot-raisin chewies with lemon glaze-- my absolute favorite. They really are the best.

I agree with cstadt. Make 'em. They are indeed, magical.
Another cookie that is easy and everybody seems to love are the banana everything cookies.

The peanut butter chocolate pillows are to die for! Also, the oatmeal raisin are an excellent standby--I just brought a batch to my omnivore filled office and they were all gone before 10 am.
Not sure if these are suitable for a baby shower...but I also have to glowingly recommend the port wine and sesame cookies. They are absolutely DIVINE! Beatifully crispy on the edges, rich chewy taste in the middle, and the sesame seeds rock on them. My man said they are his new favorite cookie in the world :) If you don't make 'em for the shower, definitely try them out another time!

Peanut Butter Blondies.. yum! I added some chocolate chips to the batter and drizzled the bars with chocolate ganache.

Peanut butter blondies are amazing and super easy to throw together. I made the peanut butter pillows for a bakesale and one of the guys announced they were like an orgasm in his mouth. I've never gotten anything but amazing feedback for the pillows. I feel like they're really appropriate for a baby shower too.

PB blondies for sure. Also the PB chocolate pillows, and the chocolate fudgy oatmeal cookies. The chocolate chip cookies are an awesome basic standby, and I love the pretzel apple peanut drops.

The Magical Coconut Bars are the most amazing, decadent thing ever! Perfect for winning over non vegans. They're definitely the best thing I've made from that book. The other things I made were the chocolate chip cookies, brownies, cream cheese brownies, and pumpkin pie brownies - none of which I particularly cared for.
