I posted today on my blog for Vegan MoFo about these peanut butter cookies that I made. I took a Martha Stewart pb cookie recipe and made it Vegan! so, the cookies tasted okay....well, they tasted pretty darn good. the only problem is that the dough was a bit crumbly and dry. it was hard to get the dough to all stick together, but just managed to get it to stick and it baked together fine. they tasted a little on the dry side, but still good. i'm thinking that maybe i should have used a different egg replacer? i used the ener-g egg replacer.
has anyone else had this problem? any suggestions? i heard that ground flax seed can make a good egg replacer, but i'm thinking of staying away from banana as it would probably alter the flavor.
