I've spent the month veganizing recipes from old-school vegetarian cookbooks like Moosewood, Laurel's Kitchen, etc. A number of the things I made turned out so well that I'll definitely be making them again, but two that made me particularly happy were a savory upside down cheesecake from The Enchanted Broccoli Forest and the pizza rustica from The Vegetarian Epicure. Both were based on recipes I used to make back in the day, and it was so much fun to revisit old favorites and make them into something new!

I was super proud of my soy curl fajitas, I just made them up for a potluck and then was like, wow, I need to scale these down and have them all the time. I also finally made my refried bean recipe in the slow cooker and it worked as well as I'd hoped!

If you want to read a bunch, I asked this same question for the chickpea magazine giveaway on the mofo blog and everyone shared their links, it was fun to read through!

Thanks for this thread - I did so much this MoFo that I forgot about one of my favourite recipes. I was super pleased with my bean and broccoli pie!

I'm also really pleased with at least getting close to veganizing the Dublin Mudslide. I still need to take another crack at that.

Yay MoFo! I think my two favorite dishes from the 'Veganizing Friends' theme were:

I had so much fun this MoFo revisiting foods from my past. Making and eating these puffy nachos even made me a little misty.
