Some sort of grilled vegetable mixture...maybe zucchini, mushrooms, and carrots. With steamed rice on the side or plain pasta. Oh, and a salad too.

I'm going to go with dressing-less salad, "pasta primavera" (ie, oily noodles with roasted vegetables) and no dessert.

I got the same salad as everyone else: iceberg lettuce, shredded carrots, a couple cucumber slices, one or two cherry tomatoes. There was a questionable balsamic dressing. The bread was good. I ate several slices of whole grain bread with sunflower seeds. My main dish was steamed veggies (broccoli, carrots, mushrooms, onions) over a mix of white and wild rice. I think kittee got the closest: kittee wrote: white rice and steamed veggies.

Last time I had a stuffed pepper was when I was in Greece (10 years ago) and was tired of all the food served when a meal was ordered so I started ordering appetizers and the stuffed peppers were awesome. I wasn't vegan though. So I'd love a stuffed pepper.

Well I'm glad I at least inspired you guys to make stuffed peppers.
I'm impressed by your dessert, every banquet I've went to I've been served salad and a stuffed pepper, no dessert.

Something with eggplant, mushrooms or zucchini, because that's all vegans eat. Likely they will be poorly dressed and over/undercooked.
