I'm in the middle of refinancing my house and, after taking a pretty major dip in value before starting to head back up, my house just appraised for more than I was hoping for. Like even more than my most starry-eyed optimist side was hoping for. It doesn't really mean a thing since I'm not selling and it's just a snapshot in time, but it makes me feel better about my overall finances. Today anyway!

Realizing that the free clinic/needle exchange that opened up seemingly in the annex of the restaurant underneath my office is part of a television set for a new show TNT is filming in the neighborhood.

I'm so relieved. I mean, I'm all for free clinics, but I was a little skeeved by the fact that a folding screen was all that was separating the "clinic" from the restaurant's kitchen. I like their sandwiches, and I'm glad to know I'll continue to get them with the Hep C on the side.

one of my cousins and his ladyfriend are in portland on a spontaneous roadtrip (they decided to drive up last night after they both got off work) and he called me this morning on the one day this week I happened to have off to hang out!
perfect timing! we went and had lunch and are going to hang out again later after I finish my stupid day-off errands and before I go out at 8 for plans I can't break!
so great to see a member of my family who doesn't make me want to barf, haha.

Yesterday was such a lovely day! It's my birthday weekend (tomorrow is my birthday, and it's also Canada Day so it's a holiday) and Trevor took me to Toronto to get tattooed by an artist whose work I have been coveting. Then we walked around all our favourite parts of the city and went for an amazing dinner at Vegetarian Haven. It was so nice to have a day where I wasn't obsessively focusing on all the shiitake going on right now.

Well my sandwich problem is mostly rooted in the fact that since I've been single, I hate buying a loaf of bread. I'm such a fancy-pants with bread that I only want to buy the expensive stuff, and also so fancy that after I only really want it as it's super-fresh... So it just goes stale/moldy on me by the time I've eaten only about a quarter of it. I could be less lazy however and buy some ciabatta rolls or something as single-use breads.

Freeze it! It's ok after it is thawed out if you toast it lightly. I like the same bread you do and hate buying it for the same reason.

If I buy or make a nice multigrain sandwich bread, I just plain to overdose on sandwiches that week.

Italian, ciabatta, etc all freezes really well. Ciabatta also makes the BEST grilled cheese with a couple tofutti slices.

Ah, see, freezing doesn't work because I just want it to always taste 'right-out-of-the-oven' fresh, and freezing, even if on the same day it's baked... makes it more like a day-old. :(

I WILL NOT COMPROMIZE MY BREADZ!

Good news is though, this thread inspired me to make a sandwich today with a ciabatta roll like I said! Twas delicious, however, the ciabatta roll method is not going to work for me as my severe underbite made it so that I couldn't actually bite through the bread (crust on top and bottom!), so I had to take it apart mostly and eat it all disassembled. Still super yum though, I bought white bean spread for it, and tempeh baconz, and heirloom tomato, and cuke. YUM.

I know the BEST bread trick: If your loaf is past its prime, heat up your oven to around 350 degrees and when it's hot you just dip your bread under the running faucet (seriously, just let it get wet) and give it 10-15 minutes in the oven. It will taste like a fresh loaf yet again. You can even do this with frozen bread, but then you have to add to the baking time!

And you should totally trust me, danes are very serious about their bread.
