OMG, I love cashew spreads. This co-op near me use to sell a roasted pepper cashew spread that I could eat by the spoonful. I was so sad when they stopped carrying it. They post recipes of some of their deli items online though and they recently posted the spread recipe though, so now my life is instantly better.

Have you tried the roasted red pepper almond hummus from the green Dreena Burton book (I never remember the title: has a whole chapter of yummy hummus variations). It's my favorite spread, and I bet it would be scrumptious made with cashews instead of almonds.

what i've been making is basically a variation of the cashew ricotta, with twice as many cashews and half as much tofu and the lemon and oil adjusted for taste and consistency. for that much spread you can probably throw in an entire bunch of chopped basil, but i guess you'd want at least a cup. everything else i just tweak until i like it.

I FINALLY FOUND MY MISSING DAY PLANNER and I feel centered and like the world isn't falling apart anymore.

that was yesterday. Today's best thing is that I got internet hooked up in my house and the speed is 2.5 mgps, could be up to 4.5 if I got a new phone line running out to the phone box! It's not a huge deal but considering I've been suffering through .25-.75 mgps with my current ISP, I'm doing cartwheels. Or basically feeling how cookie monster looks up there.

I have a job interview tomorrow and then right after that we hop in the car, drive for 5 hours into the Canadian wilderness to Algonquin and hang out at the cottage.

"The Mars Rover" is a better name than what I'd call it-- probably something like "The Technical" or something, because I am a different type of nerd. But man, I covet those little Toyota pickups. They're basically immortal. You could literally shoot holes in it and it would still get you around, which is, I guess, why they get used as technicals. That's actually kind of my current attainable dream car right now.

Learning how to sing a song in Tamil while listening to it. (If only I could learn the language so easily!)

Actually, the best thing might be getting verbal interference from the Hindi and Tamil songs I'm listening to, which means I keep on making funny Hinglish mistakes in the doc I'm trying to write.

Ooh, I've always wanted to go there.

My cat had a mammary tumor removed on Monday and we got the biopsy results today - not cancer! So happy because the odds were against that result.

That is super awesome. Do you speak Hindi? I absolutely adore that accent, which always makes me want to learn it.
