I forget exactly how i put it down on FB (there are a zillion comments, I can't find it) but here is what I do:

I make a balsamic glaze with olive oil, balsamic vinegar, a bit of tamari or soy sauce, dried thyme and rosemary.
Baste the tofurky in that, as well as my veggies (garlic cloves, onion, potatoes, sweet potatoes, butternut squash, and halved brussel sprouts)
Stick sprigs of fresh thyme and rosemary in the veggies.
Take the roasted garlic and add it to the gravy, along with a bit of the leftover glaze.

it is nom. and very easy. I guess the folks at Tofurky agree!

I wanted to celebrate the end of my frugal challenges the last couple of months by buying a few things for a collection drive for local homeless people moving into their own accommodation for the first time. When I asked my boyfriend if he'd drive me to the shops he not only agreed to it but put in some money too! We went nice and early to avoid the worst of the weekend shoppers and got lots of useful things. All the fun of shopping and then I get to de-clutter it from my house on Monday! Also, my favourite coffee was on special offer so I got eight bags. That should last me a couple of months!

I composed myself and put in my two weeks notice at a job that has been refusing to pay me overtime for about seven months, even though I work one to two hours of overtime after every shift because no one else does anything. SUCK IT, bisques.

I may have something lined up for January-April, but I won't know for a few weeks yet. And then I will have my degree in May so I can go look for a job where I can hopefully be exploited less?

It makes me so happy to see people & pets enjoying the outdoors. Today I saw two things which warmed my heart:

1) A lot of people walk their dogs here by cycling next to them, I guess so the dog can run? Today I saw a lady use the same technique to walk .... her horse! A super fuzzy roan-colored Icelandic. Not sure why she was cycling instead of riding her, but all three of them (horse, lady, farm dog out on point) looked pretty thrilled about it.

2) Saw a lady in a wheelchair walking her pup. They were zipping along! And her wheelchair had fantastic nightlights!

I finished a half marathon and even better, my mom finished a half marathon! And this super sweet wonderful woman realized my mom was having some worries/needed someone to run with her so she ran with her for 8 miles! Because she likes helping people run. That lady made my day because I could NOT have done that. (There was a half hour difference in our finishing times which kind of gives you a sense of how much slower I'd have had to go) I'm SO SO grateful to her. I'm so happy my mom ran the half!

so many good things!
we are dogsitting and i took Baggy out with me to walk the dogs in the snow. Baggy loves snow and the dogs were thrilled with it (little tiny breed indoor dogs) and the snow was magical. Even better, there was a huge flock of gooses flying around in the snow and clouds- so lovely.

My (omni) boyfriend told me he had to get dinner at his work cafeteria, and he ordered a tofu dish. (Plus 1!) He said the woman behind him asked him, "Is that nice?" (in UK, they think food is nice, it's awful) and he realized she meant tofu, in general, and that she's never had tofu. So he said it was pretty great because it takes on the flavor of whatever you cook it with. (Plus 2!) She seemed really interested! Yay I made a non-vegan veg ambassador!

And, I made Cornballers for dinner.

As a born and bred British person who has lived in both England and Scotland, I don't agree with this. Now, if they say that the food is interesting, then they usually mean it's awful.

Snow! It's so pretty out. I can even hide in the thin strip of woods behind my apartment complex and pretend i am somewhere nice.
I miss being in elementary school when people actually got excited about snow. I told some people i was excited about the snow, and their response was "well we didn't get work off so i don't care." Seriously guys. Everything is covered in water and it's beautiful.

Another snow day! I was mad at first because I was already up and exercised and showered before realizing it was a blizzard (and calling my boss, who was like 'hell no I'm not going in!'), but 'Elf' is on TV, so it's all good.
