DOUBLE POSTING!
I'm making a birthday cake for my sister-in-law's 30th birthday. We won't be eating it until Saturday afternoon. I'll have minimal time Saturday morning to bake it, let it cool, and decorate. It's unlikely that I'll end up with another chance to do it before then.
I ended up with an unintentional day off, and I wondered if it would be a terrible idea to make it today (Wednesday). I won't have space in the freezer for it, so it would have to go in the fridge. It's probably too soon, isn't it?

I'm feeling super cranky today. I broke up with someone on the 11th and I still have their camera and some clothes and a few other things. I just want to give it back already, so I texted them yesterday afternoon just saying "hey, are you free at all this week? I thought maybe we could meet up and I can give you your camera and you can tell me all about the trip." They haven't texted me back. I don't know if they're ignoring me or what, but it's annoying. I might ask our mutual friend (my ex's roommate) to bring it back, but I feel like a child asking a mutual friend to step in as if we can't be in the same room together. We have a lot of mutual friends so we're going to have to see each other at some point this semester.
ETA: yes, creep, I think It would dry out. but you could measure everything and put it into separate containers to save time later. like all the dry ingredients in one, the wet in another.

I have almost nothing to do right now. Maybe I should go buy some WD-40. The door into my bit of the office is squeaky as hell. But it's crazy windy outside, and I kinda don't wanna go out in it. I might lose my hat!

You could make the cakes and wrap them up really well in plastic wrap and freeze them till saturday. that way it won't be a whole frosted cake you'd have to freeze. then you could just spend saturday decorating.

Joyfulgirl's suggestion is good, too! And maybe you could go ahead and make the frosting and refrigerate it? Then just leave it on the counter while the cakes bake to get it to spreadable consistency again.

It's probably too soon, isn't it? It would be fine to make it today. I would suggest making a simple syrup (bring equal measures of sugar and water to a boil, then let cool) and brush it on the layers as you assemble (alternatively, you could brush it with a liqueur, depending on the kind of cake). That will help the cake stay moist. The icing acts as a seal and will prevent the cake from drying out. Put it in the fridge, but let it come fully to room temperature (UNCOVERED) before cutting. If you cover the cake while it is warming to room temp you will ruin your icing with condensation drops.

I was planning on doing a 9x13 sheet cake and frosting the day of, if I did make it early. That's why it won't fit in the freezer. But I guess I have time to do layers if I make it today. Good suggestions, thanks! I'll have to think about it.

I would second the suggestion of getting all the ingredients together for fast mixing on Saturday, but poopiebitch has a good idea too.

The mixing isn't really what I'm worried about. It's mostly the cooling time. It'll be sloppily decorated, but that'll take a bit of time for me too.
And roommate's terrible boyfriend will be here this weekend. They like to make a messy meaty breakfast when he stays over, so I'm already anticipating kitchen-sharing frustration.

k, I'm following poopiebitch's suggestion of coating the cake in syrup and putting that shiitake in the fridge for a few days. It's in the oven right now.
I've only ever used Isa/Terry recipes for any type of cake, but I'm using the birthday cake from Chloe's Kitchen today. I'm a little nervous about how it's going to turn out, but the batter tasted just like I remember vanilla grocery store birthday cakes tasting. YUM. We'll see!

My friend had her baby today. 26weeks+6days gestation. So worried about her. I hate having to see her go through all this stress and constant worry with having such a premature baby. I wish I lived near her so I could do something practical to help out instead of just sending the occasional supportive text.
