I recently discovered coating tofu in cornstarch before stir-frying.... am I the only one who didn't know about this?
Also, for more avocado toast variations: EB, Avocado, and Nooch on sprouted toast. Also Olive oil, Nooch, and salt on popcorn.... or various herbs and spices instead of nooch if you're feeling gourmet.
I was feeling ultra lazy the other night and bought a can of Amy's chili w/ veggies. I twanged it on some baked taters that were smothered with EB and nooch and it was way more awesome than I expected it to be. My little boy gobbled it up.

Melt 1/3c cocoa butter and add to one package (mori nu) silken tofu in blender. Add powdered sugar (1/4c or to taste). Add 1-2 tsp vanilla. Add 1 tbsp cornstarch. Blend. Voila! White chocolate mousse.
Substitute melted cocoa butter for 1/2 the amount of oil in baking recipes (all time fave in chocolate chip cookies). You're welcome.
Hm. Maybe I'm just addicted to cocoa butter.
OH!! And make "nut" sorbet... Put 1/2c roughly chopped pistachios (or other nut), 1c HOT (almost boiling) water, little bit of maple syrup to taste (or other sweetener), pinch salt, in blender. Blend for a long asparagus time - until super smooth. Pour into very, shallow baking sheet(s) with a rim around them lined with plastic wrap or parchment paper. Freeze until sorbet consistency (not rock hard, but scoopable - about 45-60 minutes, depending on how cold your freezer is). You can scoop into a bowl or something after it's frozen, but I'm not so fancy and I just eat it out of the baking sheet.

toast with earth balance and nooch melted on it. try it sooooooo good.
toast the bread a bit first, then put on some earth balance and sprinkle nooch on top. put back in the toaster oven and toast again intil the nooch starts to bubble.
