Oooh, I'm all over this! Here are my totally biased picks (mostly free ones, because I'm cheap!):
Wunderlist: a way to organize lots of lists - awesome if you're an organizational freak like me. Also just an easy way to keep ongoing lists for the next grocery trip/vacation/weekly tasks/etc. Flashlight: turns the face of your screen into an extra bright light for those times when you're fumbling for your keys in the bottom of an endless bag. Can also be a strobe for an instant rave, wheee! Pinterest: DUH Foodgawker: a constant stream of food porn - can be filtered to find vegan-only pics. Vegan Yum Yum: not so much an interactive app as it is a recipe list, but it's saved me a few times when I need a last minute meal idea - AND you can check off ingredients on the list as you shop. GIF Shop: take multiple pictures of something moving and turn it into a gift (I think this one is actually paid but it's worth it - endlessly entertaining)
I could go on forever but start with those. :)

I have been playing with my new iphone for 2 hours now. Where has this thing been all my life?! My first smartphone.
The best vegan app I have found is Nommunity, which tells you which restaurants are nearby that you can eat at! It found tons near me, while all the other restaurant apps found none. And it's FREE

iPad, iPhone and iPod touch share the same apps mostly (not all available on iPad or vice versa but most seem to be)
Myfitnesspal Evernote Pandora Plague, inc Kindle Etsy Mint Zombies, run (I haven't tried this out but I've heard it is a good running program) Words with friends Welder Various financial institutions have their own apps

I consult VeganXpress a lot. Tells you about restaurant chains and what dishes are vegan, etc.

Oh! I forgot about the Zombies run app!!! (I just got an iPhone, too! Squee!)

My mom got one, too, and we face timed last night, and I got to see all of her animals! The best was Mollie, her golden retriever. When I started calling her, she put her nose right on the screen. SO CUTE!
For apps, I'd recommend Find my iPhone! Definitely. Otherwise I've just been using twitter and fb for the most part, Starbucks app for now, Yelp, Instagram and Camera+ (but it's paid).

I friggin' LOVE Camera+ and at a mere $0.99, I consider it well worth the investment. People are always boggled at how amazingly it does pictures.
I love Evernote--I have it on my phone, work computer, and home computer, and it the shiitake. It syncs between them all and is just a magical source of majesty.
Being a literature nerd, I love the Poetry Foundation app. It's for reading poetry.
I have iTunes U and the NPR news streaming app.
NextBus is great for transit. (I also have local ones--MyCaltrain and Routesy, so you might want to look up your area if you use public transit.) I also have the Zipcar app, with which you can make Zipcars HONK THEIR HORNS. Brilliant.
Yelp, Netflix, Groupon, some games...
I also have a free app that turns my iPhone into a level. I use it far more often than I should admit.

Just get Instagram, then you won't have time for any other apps anyway.
Also yeah, Camera+ is good.

Starbucks app: load card/ check balance, see rewards totals, give egifts, find nearby locations, save drinks, check calories, see job opportunities, and sometimes there's a free song.

Oh, and bastah, fwiw, I run the majority of my pics through camera+ before posting somewhere. It's easy to use and nice quality. There are other apps if you want to get into big photo edits, but I like hoe easy it is to enliven pics with camera+.

Yeah, I think I'll get camera+.
I found an awesome app. Wi-fi Finder. It finds free public wifi near you. Great if you're not home or if your wifi goes out.

CBC Music app is nice... streaming radio by genre, there's like 50 channels.
Songza app is ok too.
I like Needles, for organizing my knitting needles. (Lame, I know, but SOOO helpful to needlecrafters.)
Bookworm is my favourite game.
The Atlantic.
Skype.
And I'd be totally lost without my ShiftWorker app.
