I've still got stash of the Sap Moss conditioner. My mom and I went halves on a huge jug of it because it was "only" $90 for the equivalent of 4 bottles instead of $110 for 3 bottles. Needless to say, we overestimated our affection for the stuff, and are still drowning, YEARS after it was discontinued. It is a great detangler, but nothing kills my love for a product than to feel forced into using it because I have laid in a 20 year supply. This probably wouldn't hold true with Chanel No5 though.
Smells the same, looks the same, works the same!
Aveda products have distinctive smells so you can easily tell if it has gone off (can't imagine it would though). Worst case, it probably just wouldn't be as effective. Try it and if you still like it, use it, else dump it.
