thank you for the Vita Cafe recommendation. we ended up going there twice
one morning we went for breakfast. i got the Huevos Rancheros made with tofu and a tofu smoothie and both were excellent. my husband who is an omni got the breakfast burrito with eggs and really enjoyed it.
the next day we went for dinner because my husband wanted to try the buffalo tofu and it doest take much to convince me to go to a vegan cafe ;-)
he really enjoyed the buffalo tofu wrap and i got the vegan club sandwich which was SO GOOD if a bit ginormous.
we also got the vegan nachos and we both thought they were amazing.
even though we were insanely stuff at the end we split a piece of the cheesecake which was good. my husband said he could not tell it was vegan.
im pretty sure i left PDX 15 lbs heavier :-(
