I've seen lots of recipes that I'd like to try out, but that use vital wheat gluten, for example, the infamous chickpea cutlets wich I'd love to try!

Is it a non negotiable? Or can you use something as a substitute?

You can use strong bread flour and knead the mixture very well, but you won't get the same chewy texture.

Yeah, you can sub even normal plain flour in chickpea cutlets or bean balls but they'll be different to the way they'd be if they were made with VWG.

Before I got my hands on gluten powder, I hand-made wheat meat. It takes a bit longer but is very satisfying.
