As for mine, I was going to wait to link it on my blog, but knowing me, that'll take forever. So, instead, I'll post it here and re-post on my blog.
Strawberry Chocolate Chip Muffins
.25 cup Blackstrap Molasses
.3-.4 (I stopped measuring, sorry guys) cup Agave Nectar
.5 cup canola oil**
1 tablespoon ground flax seed in 1/4 cup water
1 Cup White Flour*
.75 Cup Whole Wheat Flour*
.5 Cup Buckwheat Flour*
1 teaspoon baking soda
pinch of salt-1/4 teaspoon
1 teaspoon vanilla
Almond Milk until it's muffin-y batter thickness. ~.6-.75 cup
1/2 cup chocolate chips
1/2-1 cup diced strawberries
Mix together wet ingredients (Can use sugar instead of molasses/agave mix, just a half cup, I imagine)
Add flours in 1/2 cup increments, with baking soda and salt and vanilla (though this can be added with wet, I just forgot until I added the flours)
Add Almond Milk until desired muffin-y thickness. Stir in Chocolate Chips. Fold in strawberries. Bake in muffin tins. Eat. Yum.
*Flours can be futzed with. So all white would be fine, a mix of whole wheat and white would be good. Use spelt instead of wheat or white, skip the buckwheat, I dunno. I just made do. These would've been Spelt-Whole wheat-white muffins if I'd had any around.
**I didn't try these with applesauce instead of most of the oil, but I'm probably going to at some point, because I'm all about using applesauce instead of oil... but I'm kinda crazy like that.
