I'm thinking about bringing the potato kale enchiladas from V-con, or the squash enchiladas I sort of made up. Not exactly authentically Mexican, but in the general spirit of things, I think.

I think that we are still going to bring tamales. Maybe the red chili ones from Viva Vegan. I haven't exactly decided on the filling. Another dish I want to make is fideo, which is really good.
I probably will also make some sort of salsa & bring tortilla chips.
I was thinking about making some type of dessert, but I am still debating whether I will have enough time to make something sweet!

I think I've almost decided. I'm going to make guacamole (assuming these darn avocados ripen soon!), the "Mexican lasagna" from fatfreevegan, and some sort of dessert, either the Mexican chocolate snickerdoodles, or Mexican chocolate cake/cupcakes.

I'm excited! This will be my first time having any sort of party or gathering at my place. I was worried about Oliver, but I think he'll be fine, especially with all that food around! He's planning to take a bath tomorrow, so he'll look and smell extra pretty for his guests!

Has anyone thought what should be the theme for the April potluck?
Also, I already know that I will not be able to do a potluck the weekend of April 13th. I am going back to Michigan.

I really enjoy these potlucks! :-)

I'm really enjoying the potlucks too! Thank you all for coming over. Hopefully if I host again Oliver will be a little more sociable!

I've been trying to think of a theme for our next potluck. Here are the ideas I've had so far:
Desserts and appetizers (I really liked this theme when we did it a few months ago)
Something to do with Spring (??)
Asian
Italian
Comfort foods (probably better for colder weather)
Breakfast foods
That's all I've thought of so far. Anyone else have any suggestions?

We could also discuss doing a restaurant outing in the near future.

Ooh...April breakfast/brunch sounds fantastic! The potluck was so relaxing and fun. Oliver is so incredibly cute.

I love all the suggestions! The breakfast/brunch idea sounds so good!! It is my favorite meal! I also like the appetizer idea too. I just got Chloe's Kitchen and there are lots of good appetizer recipes I want to make!

A restaurant meetup is a great idea! There are so many places to go and try! I love it!
