I am really looking forward to seeing everyone soon!

For the January potluck, what dates work best for everyone? I am thinking that the weekend of the 26th & 27th works best for me. I won't be back to Chicago until after the 18th and I am not sure exactly what date.

Are we still going with the kale theme? I really think it is a great theme, especially for January! ;)

Jan 26 or 27 works for me! And I love the kale theme. Between birthdays and the holidays, I've subsisted mostly on sugar and chocolate for the past few months, so I think I need it!

Then how about we have it on Saturday January 26th late afternoon/early evening? We can have it at my apartment if that is ok with everyone!

I am thinking that I will make some sort of kale lasagna and a kale salad!

Sounds great, Jeni! The afternoon of the 26th works for me. I love kale, but don't cook with it often enough. I'm going to start searching for recipes!

I am getting ready for Saturday! I can't wait to see everyone!
I plan on making this kale lasagna from Manifest Vegan. I have been wanting to try this for awhile now!

I'm excited for Saturday! My plan is to make the Quinoa White Bean and Kale stew from AFR. And I might also attempt to make kale chips.

I might be making a shepherds pie instead of lasagna. I am still deciding!

I am making potato-kale puffs. But sadly, I mixed in gluteny breadcrumbs before I remembered Jeni's gluten-free. I'm so sorry!

It is ok! :) The past week or two I have been eating gluten. In fact yesterday I had too much and I can feel it! I have realized that I do feel much better off the gluten!!

I'll be hosting the next Potluck event on Sunday Feb 10th around Noon at my apartment in Oak Park.

Bring something Valentine's-ish or the color Red! :-)

Our next meetup is just 8 days away! Who else is coming? What is everyone making? I'm thinking of maybe making a batch of Vegan Eats World's Borscht.

Yay! I think that I will be making a red velvet ice cream from Chef Chole's website, as long as I can find natural red food coloring. I will also bring something savory. I just don't know what yet! There are too many things that I want to make!

Oh my, Jeni - that sounds amazing! I am trying to decide on a second recipe but I also have too many ideas :-) I'm going to have Mike help me narrow down my choices, but right now I'm thinking of making the Walnut Red Pepper Spread from Vegan Eats World. Plus I may try to make a sparkling beverage with some Tart Cherry Juice :-)

I think that I am going to attempt to make gluten-free pierogies filled with beets, potatoes & sauerkraut for my savory dish. I have never made them before, so it should be interesting!

Oh my - I LOVE pierogies!!!! They sound incredible. I bet the beets will turn the insides very colorful!
