 Post subject: Bolted Lettuce/Spinach?

What do I do with my bolted lettuce and spinach? its pretty bitter, but I hate to dig it out and trash it...

If it's too bitter, turn it under or throw it on your compost pile, and plant something else in that spot. Sometimes the older leaves won't be as bitter as new growth, but bolting lettuce tastes really awful.

Im a garden newbie so by "Turn It Under" I think you mean literally dig it up and mash it back into the soil and cover w/new soil?

RE: compost pile- need to start one, STAT! I cant believe how much organic material we toss in the trash that could be making awsome compost (not to mention awesome veggie broth. gotta do that thing where you keep the veggie trimmings in the freezer until you have enough to make broth....)
