I know that tomato seedlings can be planted very deep because they'll grown roots from their stem, but I was wondering if I could do that with anything else? Particularly zucchini, peppers and eggplant. All my seedlings are a bit leggy and I was hoping that when I plant them out I could make them more stable by planting them deep.

Yes, you can plant the three you mention deeper. But if the stems are very thin and weak they may be more susceptible to injury/rot too. That's why it is important to provide enough light (and not excessive nitrogen) for optimal seedling growth.
