so, obviously this belongs in the Canadian subforum (rather than any kitchen typed area)
I had poutine for the first time ever tonight, and omgshityourself amazing good. though it wasn't particularly traditional - it had capsicum and other stuff. but ahhhhhfuckiajdflhafg. NOM.
good job, Canada. keep it up.

"Tradition" is overrated when it comes to poutine. My favourite poutine comes from an all-poutine restaurant and their veggie has caramelized onions, peas and mushrooms on it (plus obvious mushroom gravy and I sometimes bring in daiya for them to put on since I'm too lazy to make curds). I have a location a 10-minute walk from my place, it's dangerous: http://smokespoutinerie.com/Also, I put ketchup on my poutine. I find it replaces the saltiness of the curds well. Actually I put ketchup on when I ate dairy curds anyway, it's just damn good. POUTINE!

It's not my recipe! It's Bryanna Clark Grogan's. :) I'll send it to you again at some point! I still haven't made her cheese curds...I just used cheezly.
Capsicum does NOT belong in poutine. Gross.

there's a restaurant here that has North American cuisine. (I say restaurant, but it's just a pub where a band played that I wanted to see) in addition to poutine, I also had southern fried chicken on waffles (drowned in maple syrup), with a side of mac+cheese. it was all manner of forked, haha. I told the guy when I ordered that 'this will probably make me pretty sick, right?' 'well..yep. but, you know, it's a pub! what do you expect?'

There's a poutine place right by my house, too ( http://www.la-poutine.com/). The people that own it said that traditional poutine gravy is actually vegan, so when you go an order poutine there the default gravy is vegan. They also have daiya cheese. Even though I've lived in Canada my whole life, the first time I had poutine was like 6 months ago. I also put ketchup on my poutine.

Knowing that poutine gravy is supposed to be vegan makes me love poutine even more now! For anyone in Toronto, Poutini's does poutine with vegan gravy and daiya.

You guys put ketchup on your poutine!? That's... interesting.
I haven't had "real" (or at least a veganized version of the original) poutine since going vegan, only a variation involving caramelized onions and red peppers. It was tasty, but it's not the same.
And yeah, the St-Hubert "poutine sauce" is vegan, but it's probably hard to find outside of Québec.

Also, is the St-Hubert poutine sauce mix that you can buy at the grocery store also vegan? I've never thought to check. That's something that can be mailed to folks across the country! (You really have to love your St-Hubert poutine sauce for that, though, haha)

I am in the ketchup-on-anything-is-weird camp (because, ew! ketchup!) but Ginny Messina wrote an interesting post today about umami being present in animal products and vegan food being made more delicious with umami. One source of umami? Ketchup! Looks like the ketchupers are on to something! Quote: Fermented foods have umami, so wine, tamari and miso are good additions to dishes. Ripe tomatoes are loaded with umami and so is ketchup. (If you know someone who has the annoying habit of putting ketchup on everything, it turns out that he or she is an umami trendsetter).

I like it with peas and mushrooms. Yum!

Yes, it boosts the umami! It's really good. And there's ketchup dispensers at the poutine place for a reason!
