I have an nearly 10 hour layover in Denver today. I'm escaping the airport to see how much Watercourse and City O'City I can eat in one day. A lot. The answer is a lot.

I made my travel plans super late (hence the 10 hour layover), but I will message you he next time I'm in town!

I ended up staying at a Towneplace Suites because they have in room kitchens. I drove to City O City and Nooch. On the layover the first part of our trip we went to Watercourse and an Ethiopian place. Denver was pretty yummy. Those wings at City were huge though. Could feed a small army. The cashew cheese mediterranean olive pizza and caesar salad were delish! The Ethiopian place was great but I can't remember the name. You are doing pretty well for yourself, Denver!

Was the Ethiopian place called Axum? On Colfax? Never was there, just drove by all the time.

Not sure. My husband drove there and I wasn't paying attention. I think it was on Colfax, but there were a few in the area.

There are approximately 8,000 Ethiopian restaurants on Colfax, and I never remember any of their names. Except for the one that is actually called Ethiopian Restaurant.

Bumping this to say dangggg city o city is good. I ate a ton of food and got a lemon bar to go for breakfast this morning. I was in town for a short work trip but I want to come back for fun!

I am ashamed to have only learned this recently. So awesome! Denver isn't a super vegan-friendly city for how healthy it's inhabitants supposedly tend to be, but Watercourse no longer plopping cheese on otherwise awesome food is a huge boon!
