I'm headed over to New Mexico in late April for a whirlwind tour of the state. Very excited to go!

I've been checking out the restaurants in the area on the internet and I cannot find a decent looking mexican restaurant that doesn't have cheese on everything. Plus it seems lard is looming in seemingly innocent dishes also. Any recommendations? Would love a decent marg to go with. Patio is an extra plus. We will be in ABQ, Santa Fe and Las Cruces area mostly. Thanks in advance for any recommendations. Looking forward to being in this awesome state!

I have not found a single vegan friendly Mexican restaurant in this state. Having said that, ABQ has a surprising number of vegan restaurants and Santa Fe is very vegan friendly too. Just not the Mexican/New Mexican restaurants.

What?! That is crazy!!!! I guess I will have to stick with Chipotle. Thank you so much for your response tho. If I find anything while I am there I will let you know but if you haven't found it, I doubt I will.

I was thrilled to see Chipolte show up for exactly this reason. You need to go to Thai Vegan (there are a bunch of locations). The food is awesome! Sadly, Mint Tulip has closed, so no more vegan diner-style food available.

La Salita in Albuquerque is vegan friendly. They have vegan stuff labeled. They have veggie tamales, guacamole enchiladas and other options.

Thank you everyone for your help. I actually got back on the 27th so I missed that opportunity to visit La Salita.
In my travels around the state of New Mexico, I did eat at Annapurna's and India Kitchen. Both I thought were good. I had a super delish portabello fajita (just ate the grilled veggies and guac) at Blue Corn Cafe. Nice margarita, chips and salsa too. I loved the beer at Il Vicino. I tried stopping in at Whole Foods for some basic items and was shocked to find out you cannot buy single local craft beers there. Well at least there was nothing local by the bottle when I was there. Overall I was surprised by how much beef and cheese there was in everything. I am out of touch with the rest of america being that I am in NYC. Some places like Las Cruces were really a food challenge. In those areas we ate a lot of potato chips (lolz!). Either way we just loved the entire state of New Mexico. It was breathtaking in it's beauty and everyone we met was welcoming and helpful. I wish there was a Ten Thousand Waves Spa in NYC. I will miss those mountains, mesas, prickly pear and yucca.....and those lovely cooing mourning doves and glossy ravens that were everywhere......xo new mex!

10,000 waves is my favorite. I will be moving away soon and I will so miss it there. We stayed there for our honeymoon too.
