Hi All!

I'm so excited for our next Chicago-Area PPK Potluck with a Cinco De Mayo Theme! Bring a Mexican-inspired Vegan dish to share.

Date: Saturday, May 4th
Time: I'm open to suggestions, but 2:30 seemed to work well for everyone last time!
Location: At my place in Oak Park (within 2 blocks of the Harlem Green Line, the Oak Park Metra, and a $1/hour parking garage). If you're able to join us but need my address just let me know and I will send it to you via private message.

Drop us a note here to let us know if you can join us. And once you've decided what you'll be making, let us know so we don't have any repeats.

(P.S. Since I'm hosting, I'll also be supplying beverages in the form of some sort of Agua Fresca!)

I want to make tamales, but I don't think that Hector & I will have time to make them for this potluck. :( Maybe we can later on in the summer!

I already know that I am going to make the Mucho Margarita Cupcakes from VCTOTW! I have wanted to make them for awhile & this seems like the perfect occasion. :)

Can't wait! I haven't decided what to make yet, but I just got Viva Vegan from the library, so that should give me some inspiration!

I still plan on making the margarita cupcakes! I also will bring conchas. I am still trying to perfect the sugar topping.

I want to bring something a little lighter too. Maybe a salsa or some sort of salad. I am not sure. I am thinking about the chipotle caesar mexicano from Viva Vegan, but not sure!

I am SO excited to try my first ever conchas!

I haven't found the actual recipes yet, but I decided on the concepts I want to make (so if you have any great recipes - let me know!): 1.) watermelon-mint agua fresca 2.) elotes (unless someone else wants to make them - I think this was actually Jeni's idea but it sounds so good to me!) and 3.) tortilla soup ( I LOVE tortilla soup and sadly think it's been years since I've had any!)

I think I've finally decided. I'll be making the Tres Leches Cake and the Arroz con Seitan, both from Viva Vegan.

I haven't quite decided what I'm making, yet. Probably something involving beans and avocados. It will be a surprise!
