I am !obsessed! with the tamales from this place. Has anyone who's gone there figured out how they make the "meat" they use? It says it's soy-based, but I've never had anything like it before. I really want to find out how to replicate it so I can make tamales like that at home.

Has anyone ever run across a recipe that makes a similar soy chicken (or any other type) to what they have there?
