Woah! But I'm confused. I thought gelatin was made from collagen, so does that mean the yeasties are expressing human collagen? Is human collagen chemically distinct from other animal collagens? Quote: Human DNA-derived gelatin has actually been in use for a while, in vaccine preparation and the gel caps that many over the counter drugs come in. Does that mean gel caps are mostly lab-derived gelatin now?

Quote: The sale of current agricultural products from a recombinant gelatin production crop could drive the marginal cost of recombinant gelatin production near to zero, allowing for direct competition with animal-based gelatins. FibroGen is initiating feasibility studies with major capsule manufacturers to evaluate the suitability of recombinant gelatin for use in their manufacturing systems.

The future recipe of gelatin just might be human-derived instead of cow and pig collagen. According to scientists in China, all they have to do is inject human gelatin genes into a strain of yeast. Technically, human bones and skin aren't actually in the gelatin.The benefits of this new and improved recipe include better quality and the fact that human gelatin has less risk for disease (it could provoke immune system responses in humans or carry infectious diseases).
But the real question I have is: Would it be considered vegetarian? Technically it's not composed of human flesh, but it is made from human DNA. Personally, I'd be hesitant to eat gelatin made from human DNA--even though it's just DNA!

This gets back to the vat-grown human meat question, I think, although it's sort of a matter of degree (it's collagen, not flesh).
