#1 Roast and eat by themselves or on a salad. My fav is: arrugula, roasted, corn, beets and lime cumin dressing.
#2 Peel, shave thin pieces, marinate the raw beet slices in evo, lemon juice, and garlic...enjoy.
Also I feel the need to share that the local brew pub here, has a beet beer called Beet-L-Juice right now.

I second roasting them. I usually cut them into wedges, toss them with olive oil, salt, pepper, and a splash of champagne or white wine vinegar (to cut down on the sweetness), then roast for about 30 to 40 minutes.
Sometimes I'll add the roasted beets to a pasta salad or have them with some greens and toasted chickpeas.

roast them with lemon juice and zest, olive oil and lots of cumin. Throw on some nice fresh chopped parsley and more lemon juice when they are done.

I just made Ricki's beetaroni a few days ago and it was the bomb! It was easy to prepare and it tasted smokey and delicious - no dirt taste!

oh oh - whenever I have excess beetroot I make beetroot hummous. Because I'm always eating hummous. Plus it makes it even better for you AND it goies deep pink. Who doesn't want to eat a pink paste?

I made beet bean burgers before and they turned out really well. I don't remember everything that went in them (or specific amounts) but it was: Grated beets Black beans Gluten Taco seasoning salsa
