 Post subject: Shortbread

I want to make some shortbread cookies as a gift. Can I just get some gluten-free mix and sub it 1:1 for flour and mix it with the butter and sugar? Or should I make some other changes to a shortbread recipe?

You could try subbing a gluten-free mix 1:1, but you should pick something with a mild flavor (not chickpea).

Yup, what MM said. I've made the shortbread from VWAV, I think I used a combination of brown rice, tapioca and potato, but I'm not 100% sure. Use a regular gf flour mix.

I made shortbread with rice flour and a bit of xanthan gum. They were okay but I think next time less xantham gum (used 1/4 tsp for 1 cup flour) because they weren't crumbly like shortbread is. I think next time I will use 1/8 tsp xg or less.

I just followed the same recipe that my Mom uses but subbed the butter for 1/4 cup vegetable shortening & 1/2 cup vegan margarine. Or you could just use 3/4 cup buttery flavored EB sticks.

1 cup flour
1/2 cup cornstarch
1/2 cup icing sugar
3/4 cup butter

bake at 300 for 15-20 minutes.

I was thinking of just getting something from the store like Bob's Red Mill or King Arthur.
