For a sweet potato pie I made a crust with:
1 C brown rice flour
1 C almond meal
1/3 C Nuttelex (vegan margarine)
2 T water

Combine flour & almond meal. Rub through Nuttelex. Add water, form into a dough. Crumble dough into a greased pie dish and press into a crust. Chill for 15-20 mins then bake for 10 minutes at 160C. Fill and bake.

I used this one: http://cupcakepunk.wordpress.com/thanksgiving-tutorials/dessert/perfect-gluten-free-pie-crust/ in this pumpkin pie recipe: http://cupcakepunk.wordpress.com/thanksgiving-tutorials/dessert/vegan-pumpkin-pie/ and it turned out well. Definitely see the pumpkin pie recipe for details on getting the crust into the dish and pre-baking it if needed. Rolling it out on floured parchment, laying the dish over top, and then flipping the whole shebang over worked way better than however I would have tried to do it.
