 Post subject: Not GF, but gluten reducing

So after reading around on the old PPK I've decided my intolerance isn't that severe. It's mainly that seitan kills my stomach.* That being said, I'd like to avoid heavy amounts of gluten in my diet. I find I do best when I eat wheat when mixed with other grains. For example, my favorite tortillas are multi-grain and also have barley, rye and flax in them. They seem to make my stomach feel less heavy than a normal whole wheat tortilla.

Anyone else in this boat?

*Maybe TMI, but I basically cannot poop for 4-5 days after eating it which is horrible.

Barley and rye also contain gluten. Maybe you just have a wheat thing? I think seitan is tough on a lot of people's tummies.

Possibly. I'm not sure. I just know when I eat either seitan or a lot of something with whole wheat flour my stomach freaks the hell out.

Mine, too, although I can tolerate small amounts of it. I found out when I started making my own seitan from scratch and eating it every day. Stomachaches and headaches. I also have trouble with the seitan Primal Strips, and beer (although that might not be from the gluten). Breads, pastas, cereals, etc. are usually fine.

I know how you feel, for years I just ignored stomach pains and had no idea that there was probably something wrong with my food/digestion.

I've never had seitan but certain wheat-based foods definitely made me feel worse than some breads/cereals. Things like wheat-based schnitzel were the worst.

I think just cut out the foods you find problematic or eat them in very small amounts.

i'm glad to know i'm not the only one with selective gluten or wheat issues. the cookies i made last night almost killed me, but the apple cake i made with the same flour was no problem.
