VWAV jerk seitan with quinoa and sauteed spinach  my first time with the jerk sauce; super yummy, although I thought it would be redder? I consider VWAV my fav cookbook so I can't believe there are still dishes in VWAV that I haven't made yet; my new-board resolution is to make each and every dish!

Do not know the recipe that you are using but Jerk sauce is brown almost black for the real wicked jerks...Anyways love your pic and it is a very healthy and tasty dish.
