 Post subject: Help, I need a GF, chocolate free, nut free, GMO free...

...vegan (and possibly soy free but I was told soy is ok as long as it is non GMO) cake for Friday.

I've never baked a GF cake before.

A friend of the family is having a 50th birthday party and today I was asked if I wouldn't mind baking her a special cake since they know I bake awesome vegan goodies (thanks to Isa). I happily agreed but I need some guidance.

A coworker told me that Betty Crocker now has a gluten free box mix that is excellent. I need to find out if is also free of all the other things on the list. Has anybody tried it?

Any and all recipes or guidance would be greatly appreciated. I need to do a trial run (or two) before Friday.


ETA: The BC mix looks good with the exception of soy flour. No way to know if it is non GMO without contacting the company.

I have tried it and it is really good, in fact we have a box in the house right now.

Here are the ingredients:
Rice Flour, Sugar, potato Starch, Leavening (Baking Soda, Sodium Acid Pyrophosphate, Monocalcium Phosphate), Xanthan Gum, Salt. may Contain Soy Ingredients.

I found a yellow box mix from Cherrybrook Kitchen that doesn't have any soy. I may be a little boring so I can maybe dress it up with some strawberries and Isa's basic buttercream frosting. I'll give it a try as one of my trial runs.

I always do flax seeds as a way of sneaking them into my kids food, 1 tablespoon mixed with 4 tablespoons of water. I bet applesauce would work as well, though it might affect the taste a little.
