 Post subject: Advice needed on cupcakes baked at wrong temperature.

My niece made the basic chocolate cupcake recipe in VCTOTW, and the oven was accidentally set to 325 instead of the required 350. The time is up on them and the toothpick test revealed a gooey center mess, but the tops are done. How can this be remedied?

A few more minutes at a much lower temperature? Then maybe let them sit in the pan for a while? I've always been able to make this work, as long as the tops aren't particularly browned already.

I moved it to 350 and let it bake for a few minutes longer, and it seems to have fixed the gooey problem in a few of them, but some still seem kind of sketch. They're chocolate, so it's tough to tell if the tops are browned, but they seem pretty ready. I moved the temp back down to 325 since I read the reply, so we shall see what happens. I was going to prepare the icing, but now I am in a holding pattern. No need to waste icing and more time, I guess.

Personally, I prefer a slightly undercooked centre to a burnt top. You could turn them into a sort of chocolate pudding thing, maybe?

it may be too late, but you can put a piece of tin foil over the top and keep baking them. Since the bottoms may also be getting toasty, make sure they aren't on the bottom shelf.
