Mujadarah, which is essentially to me a vessel for caramelized onions. Especially since I used medium-grain rice, and the rice and lentils got all pasty. Still, mmmmmm.

Kumara roasted with garlic, rosemary and red onion, grilled vege sausages, and a spinach, apple and almond salad. (my flatmate has a friend from Germany staying so the kumara are so she can try them!)

I've thought about making Vcon chickpea cutlets, since I haven't made them before, form them into nuggets and dip in BBQ sauce (I made a shitload of it last weekend and haven't eaten any of it yet...) with coleslaw on the side. But I've read so many reviews about the cutlets, and most of them are negative? Please, someone! Decide for me, should I try them anyway or eat leftovers from yesterday?

I'm super hungover so I just ordered Thai (red curry and coconut rice) and plan on eating it while watching The Big Bang Theory. Sweeet.

I'm hoping to make some spicy baked edamame samosas (basically the VWAV recipe) to freeze for snacking on later, and then stuffed poblano peppers from VB for din din.

I used the ppk down-time productively and made YRR baked mac n cheese for dinner. SO GOOD.

I made steamed seitan sausage, then made Italian sausage sammies with marinara and Daiya mozzerella. I'm not going to lie, they were fantastic! Steamed seitan=perfection.

I had alfredo (from Lachesis on the old boards via VeganDad) with whole wheat penne, some sautéed zucchini and a Gardein chick'n patty. Omnomnom.

My dad's bday dinner:
fancy noodles with sauteed mushrooms and spanish onions, cooked with wine, and kale-walnut pesto. Garlic bread on yummy ciabatta, roasted cauliflower on the side. Lemon birthday cake with a sour cherry compote middle and topped with vanilla buttercream.

Cheezy noodles (sauce recipe based on one in the Uncheese Cookbook) with whole wheat rotini, with soy curls, cauliflower, and zucchini mixed in.
Cheezy noodles + soy curls + whatever vegetables are around has become a go to dish for us lately.

Joanna's chick'n nuggets, pasta with esme's sauce and roasted brussel sprouts. Everything was so good! I had a problem with the nugget mix being way to thin so I added more VWG and chickpea flour to thicken it up. I'm not sure what I did wrong, I need to check the original recipe in case I copied it down wrong.They ended up being a bit bready. I still ate a lot of them though!

I made squash & tempeh curry. Nothing beats tempeh simmered in a coconut milk curry. The squash was good too, sweet & spicy.
