What to make with a lovely cauliflower? I usually make the red lentils cauliflower curry from Vcon, but I am a bit sick of it. Any other idea? It can be anything, from sides to main to whatever. Thanks!

I my family we used to make what we, sarcastically, call a Sunday Roast. It's a head of cauliflower bolied whole, put on a beautiful plate in the middle of the table with a big chefs knife and fork so everyone can cut a big chunk. Served with salad and all sorts of fixins, like hot sauce, hummus, bread, curry or just plain veg marg and sea salt (i like it best with just marg and salt).
Whatever's left is delicious in a salad the next day, with lots of vinaigrette.
It might sound too simple, but it's honestly my favourite way to cook cauliflower.

I just started really liking cauliflower too...it is good in any kind of saucy curry
Its also good with a bit of olive oil and dried herbs roased in the oven. it makes a good simple side dish like this
Oh, and in AFR there is a recipe that mixes potatoes and cauliflower and mashed together. not only is it less calories, but i like the taste a lot
I am waiting to see what other people say! i need new ideas too!

The other night I boiled mine for about 3 minutes (blanched it? is that right?) and then mixed with with some olive oil, garlic, and a seasoning blend from Trader Joe's (everyday seasoning I think it's called), added some Daiya cheddar on top and baked it. It was very good, but if I wasn't starving at the time I was cooking, I would have made the cheezy sauce from Veganomicon. I was in a throwback kind of mood, and growing up there was always cheese sauce with broccoli or cauliflower. It's also lovely just roasted with the olive oil and seasoning. In Skinny bisque Everyday there's also a recipe for a curry cauliflower; I think it would be easy to find something similar on the internets.

There's a pasta casserole recipe in 500 Vegan Recipes where the sauce includes cauliflower and tahini. It's really good and really creamy.

I've had Mashed Cauliflower (alt. to potatoes) but I haven't made it myself. I actually prefer it to mashed potatoes. I think my fav way to eat cauliflower is raw...dipped in hummus or in a salad.

AFR also has a recipe for roasted cauliflower...you basically toss the cauliflower with seasoned breadcrumbs that have been moistened with olive oil, and roast in the oven. I like it with a squeeze of lemon after it comes out of the oven.

Popcorn cauliflower! Cut the florets small, toss them with olive oil, salt and some red pepper flakes. Bake them until they're browning a bit, and then put some breadcrumbs over top during the last bit of baking. It's so tasty!

Or similarly, Hungarians do a cauliflower casserole - basically just boiled cauliflower, a topping of bread crumbs mixed with oil or margarine, when the top has browned, take it out and serve with sour cream.

yeah, i always like mine roasted with sea salt, pepper, 'n olive oil - then topped with cheezy sauce. an awesome soup (creamy cauliflower & chickpea soup with parsley coulis) i had a while back that rocked some serious socks (i roasted the cauliflower for this recipe, too): http://veganhomemade.wordpress.com/2010 ... omework-5/ (scroll down for her recipe) cauliflower gratin is always yummers, too. mmmmm!

I love roasted cauliflower! It is also good cut into steaks and panfried until it gets nice and caramelized.

Roasted, curried, as Isa's famous caulipots, you really can't ever go wrong with cauliflower.

Gobi manchurian! It's Indian battered, fried cauliflower florets in a sweet and spicy sauce. One of my favorites.

they are delicious braised in a brothy curry sauce. i think there's a recipe something like that in VWAV. or maybe not. i really can't remember now..

I never thought to add breadcrumbs, sounds delicious!
