I'm waffly excited (snort) but I just got my first waffle maker/iron today (hurray for Lidl specials!)
I'm going to have to work my way through a back catalogue of recipes I've admired in the past but haven't been able to make, but in the mean time, what are your favourite waffles?

There used to be a recipe for apple waffles on ppk, but I can't remember which book it's from. They are delic. I also have an old recipe from allyou.com for "ham and cheddar supper waffles" that is easy to make with vegan substitutions and it makes a fun dinner.

The raised waffles in Vegan Brunch are sooooo good. They are my ultimate waffle.
But for fancy flavors, VB chocolate beer waffles and VWAV pumpkin waffles are both awesome.

i just got a waffle maker for xmas. so far i've made only made the chelsea waffles from VB, but raised waffles are next!

I LOVE the savoury cornbread waffles in Vegan Brunch. Basically, make every Vegan Brunch recipe.

VWAV lemon corn waffles w/ blueberry. Anything from Vegan Brunch. It might just be that my waffle maker is older and losing its nonstick properties, but I've found that with vegan waffles, spraying with oil is KEY.
If you want to get started without waiting for a recipe, though, I love to make potato waffles - there's a recipe in VB, but you can use any kind of mashed potatoes, even instant, and it's fantastically good with catsup.

I just got one too! I'm in the midst of freezing a ton of food for my upcoming semester and it struck me that I always hear about people freezing waffles. I checked Craigslist and scored a brand new-looking one for $5. I'm planning on starting with VB raised waffles and perhaps the chocolate beer. Mmmm.

The lemon corn waffles with blueberry sauce in VWAV are my favorite waffles of all time. The banana walnut waffles in VCON (?) are pretty good too.

Thanks for all the ideas, guys, I'm spoilt for choice now. I think I'll start with a plain-ish recipe and work my way up from there. I hope the waffle maker isn't really shiitake, I might cry!

I've made the brownie waffles from Vcon and enjoyed them immensely. My waffle maker sucks though, so I don't make waffles often. No matter what I do, the waffles stick to the iron. It's pretty old (I took it from my parents' place when I moved out), so I probably just need to replace it before my copy of Vegan Brunch turns up in the mail.

my favorite waffle recipe is the one from joy of vegan baking. Waffle I. I've tried a couple from vegan brunch and they're good, the lemon cornmeal one is good but none of them come out as crisp and delish as the joy of vegan baking one (for me anyway).

I'm ashamed to say that in the two years I've had my waffle maker, I've only stuck to this recipe. I love it though! I top my waffles with fresh fruit, butter-like-substance, and maple syrup.

I made waffles!
My first attempt was horrendous, but that was my fault - I was trying to be quick and used heaping teaspoons of baking soda and powder instead of flattened measuring spoons - the waffles were skeleton-like.
Attempt #2 turned out much better - I made the cornmeal waffles from Vegan Brunch, they were very tasty with maple syrup and banana on top.
Onwards and upwards! I might try something fancier this weekend. Thanks for all the suggestions!
