I was just curious, and I couldn't find a thread on it in a search, but when you guys make seitan do you pack down the flour? I usually do, but in the Everyday Dish seitan sausage recipe, she says not to. Should I not do that from now on?
I also always pack down any flour, for bread or cupcakes or anything.
What's right?

I never pack flour down. I scoop and swipe.

You should never pack flour! Technically, you should spoon into your measuring cup, then level, but I'm too lazy for that shiitake so I make sure it's not too settled (I shake the container I keep the flour in to loosen it up) then I scoop and level.

i don't even level. I just scoop. I adjust if needed.

I only pack brown sugar. Or basil, because I don't think that recipes ever have enough basil in them.

I just scoop and shake it back and forth until it's level. If I'm feeling fancy, I'll scoop it with a spoon first and then level it with a knife.

I confess that I had no idea what this thread would be about when I clicked on it (with a certain amount of trepidation). Now that I know what we're talking about, I'm bound to admit that while I don't pack in the flour, I do make it a point to BAKE IN THE FLAVOR!

I have been doing it wrong! But my baked good generally turned out ok. I'm an ex-flour-packer because of this thread.

I've never made seitan, but I only ever scoop and level off the top when measuring any flour.

Wow. Just made the baked seitan in VOTC. So much better, without packing it in.

Depending on the vessel my VWG is in at that moment, I either scoop or pour. I'm not all that precise in my vwg measurements for seitan. It's easy enough to adjust the liquid.

No, I don't pack it in, I just scoop my measuring tin into the flour bag, roughly round off the top with my index finger and proceed.
Also, I thought you were going to ask if we ever pack it in on a a recipe that maybe looks like it isn't going to work out, like if our cupcakes sink or we accidentally put in 1/4 cup instead of 1/4 tsp of salt and I was going to say NEVER. NEVER EVER. I GO DOWN WITH THE SHIP. *white knuckles shipwheel*
