I actually don't have that many vegan cookbooks. If I find a good cookbook that's not overly meat-centric, I'm good to go. I can veganize most anything anyway.
1) Vegan Brunch - Two Words: Omelets 2) VCTOW - It's magic. If I dig it out and put it on the counter, cupcakes magically appear. 3) American Vegan Kitchen - I don't even have this yet, but I know it'll be a favorite. I haven't been to find it in any bookstores, though not even Powells (pdx). 4) Vegan Soul Kitchen - So many ideas. 5) VCTOCJ - Same as cupcakes, but less so.

Technically, all I need is in the first three cookbooks. If I have to pick two more from what can only be described as an obsessive library, it's a matter of in-the-moment personal preference. There really are a lot of cool vegan cookbooks out there. For example, I pack three lunches a day, not counting my own. I always reach for Vegan Lunch Box for inspiration, even if I don't make the actual recipe. Similarly Mediterranean Vegan was one of my first vegan cookbooks and a sentimental favorite even if I don't use it often. Eat Drink and Be Vegan is good for ideas for celebrations. . . . I'm not good at exclusive lists.

I just bought a copy of Simply Heavenly on Amazon and since it was out of print it was costly. I am hoping it turns out to be worth the money!!

Veganomicon Eat Drink and Be Vegan Vegan Brunch Indian Vegan Kitchen Viva Vegan
Those are the ones I wouldn't want to be without. But VWaV and Vegan Cookies are honorable mentions. I also love a couple of vegetarian cookbooks with mostly vegan/easily veganizable recipes, like Love Soup.
