I would totally share the laksa recipe, but I kind of made it up as I was going. Unfortunately my food processor is on its last legs and can't make curry pastes anymore, so I had to use one from a jar- and I can't remember which one it was. It was the only vegan one I could find. But from what I remember, I threw about 4 tablespoons of that in a wok with a can of coconut milk, let it simmer for a while, and added a couple of cups of veggie stock. I let that simmer a bit longer, then threw in a handful of chopped Vietnamese mint, some tofu puffs and pak choy, then added soy sauce, a little bit of vegan fish sauce and some lime juice to taste. Then I just poured it over some egg-free Hokkien noodles and bean sprouts, and added more bean sprouts (you can never have too many), coriander and chilli on top. Done! I kind of surprised myself with how easy it is to make.
