Well I ran out of tahini, but I had this little jar of cashew butter that I've had for ages in the fridge, and don't like as much as peanut butter. So I substituted it for the tahini, added a little more soy milk to the batter to get the right consistency, and they came out great!
Also, I like to bam up on the lime zest and add a little more than called for.
I love these cookies, they are quite a hit with the tahini. But now I know I can play around with other nut butters (peanut butter next) and maybe even other citrus zests.

Thanks. I think the cashew is a little too subtle. I'll bet almond will be the best. Some people don't care for the taste of tahini, or even hummus. I think everyone likes almond, or peanut butter.
