boyfriend is home whipping up VivaVegan chipotle seitan and potato tacos as we speak! with some red cabbage (tossed in cilantro citrus viniagrette) on the side, and margaritas with his amazing homemade sour mix. I'm so excited that I'm not sure I'll be able to stay at work til 7.

Aloo palak, green beans with cashews and mustard seeds, jeera pulao, and jeera papad. (Aside: WHERE DO I GET MY PROTEIN?) Milwaukeeans, go to this grocery store! It's so cheap and the shelves are packed full of goodness. They even have fresh curry leaves, which I've never seen anywhere else in/around the city.

Spinach baked polenta, topped with black beans and salsa. Polenta is my new go-to food because I am dirt poor and cornmeal is SO CHEAP.
Anyways, it was pretty delicious, but it would've been nice with some cheddar or sour cream on top too, I think.

Acorn squash and fried quinoa- quinoa, onion, carrots, celery, bok choy, tamari, olive oil OR Thai Dynamite with tofu and brown rice from Pei Wei depending on how this day goes.

VB sausages, sliced thin and roasted in the pan, inside a soft burrito with raw peppers. But with what spread? Cashew ricotta? I want some veggie spread, but don't want to go through the trouble of making one.

Tomorrow I'm having curried butternut hummus in a wrap with veggies. I've had a butternut squash lying around for a couple of days without being able to decide what to do with it. Now finally!

i think tonight in celebration of finally discovering daiya on this crazy island, we are having pasta with marinara-ground veggie sauce, sprinkled generously with daiya. still deciding on the veggies for the side though. maybe just a nice little salad as i still have a full container of greens and herb nearly ready to go off.
eta: i forgot the most important part!! i'm making gluten-free, soy-free pumpkin pie tonight! i will food porn it if it's a success!
