I made the rocky roads for a work meeting, but I used Dandies instead of white chocolate chips. They were scarfed down instantly, and everyone loved them!

As far as he's concerned, there are no other recipes than that one. Mine too! He also hates it when I make chocolate chip cookies without peanut butter. Sometimes I just want the classic cookie!

I made the Carrot Raisin Spice Chewies for my co-workers over the holidays, and they were a huge hit! I love the lemon glaze.

I made classic choc chip, and also the mexican snickerdoodles yesterday to take in to work today....I didn't even know what a snickerdoodle was before getting this book....I upped the cayenne a bit in these and they are fantastic.

Made a half recipe of the cowboy cookies for a superbowl get together - it still made about 20 cookies and they were a huge hit! I think I over baked them by a minute but still outstanding. I love no fail cookies.

This isn't in VCIYCJ, but the Chewy Chocolate Raspberry Cookies from V'con are really good cookies to sandwich around vanilla or raspberry ice cream.

Finally bought it, and in the last few weeks I've made the Blackstrap Gingersnaps and the Deluxe Cocoa Brownies (three times!!!).
The Pistachio Rosewater Cookies, Rumnog Cookies and Lemon Bars from VCon are staples of my Christmas baking for the last two years as well.

I made Peanut Butter Oatmeal cookies and Cherry Almond cookies last night. Both are delicious. I didn't realize that I didn't have almonds though, but I subbed some of the flour for almond meal and used almond milk.. not the same, but at least it gave the cookie a little more almond flavor.

I made the roll and cut sugar cookies tonight, I didn't leave time for refrigeration so the dough was quite sticky while I was rolling it but they turned out awesome!

It's hard to pick a favorite, but your first always holds a special place in your heart, right? The fig bars rock my world. The first time I made them, I swore they were the most awesome thing I'd ever cooked before. Although, the figs I had to cut up were very dried out- hard as rocks- and I wore the skin off of part of my index finger cutting them up. That is how committed I am to these cookies. Carrot spice chewies and cherry almond cookies are also favorites as well. I recently made the orange agave chocolate chip cookies, but they were too soft for me. I actually liked them a lot better stale!

I made the oatmeal raisin cookies, but without raisins because they are evil. They were ridiculously easy to make and really good! I left out the spices and added 1/4 tsp of butterscotch extract for good ol' butterscotch oatmeal flavor.

While everything in that cookbook looks amazing, I have to admit that I have yet to explore it beyond the chocolate chip cookies recipe - because my ds requests chocolate chip cookie dough on a regular basis. In fact, I've promised to make him more today. Someday (maybe during my spring break, which doesn't coincide with his?) I plan on trying out many more of the recipes...

Do the magical coconut layer bars! They're amazing but they always take forever for me. I'll probably make them on my spring break too, ahah.

Any ideas about where to get shortening for the choc chip chai shortbread in the UK? I've tried these once using 1 cup margerine instead of 1/2 margerine and 1/2 shortening, but it didn't work that well, and would like to try it with shortening.

I wanted to try a cookie recipe before buying the book, so I tried the Mexican Hot Chocolate snickerdoodles. They look beautiful and taste so good. I think these would make nice ice cream sandwiches with coffee dairy free ice cream.

I took them to a meeting and so many people (omnis) made it a point to tell me how great they were. It turned out that one of the women has a vegan daughter - she asked me for cookbook recommendations and took the leftovers home!

I made the peanut butter blondies for a group of friends last night and they were AWESOME! I wasn't sure what to expect, but I ended up really liking the results. A cross between a brownie and a peanut butter cookie! Why hadn't this been in my life before? And they were so EASY to make!
I may have kept a little piece off to the side to eat for breakfast this morning...

I made the peanut butter chocolate pillows to take to work. I made them half-size, so there were 48 cookies. My office of 12 omnis completely devoured them in a single day, and as an added bonus I got to talk about vegan foods with several co-workers! One is completely intrigued and has asked that I bring some cookbooks for her to look at. Love when food opens doors! (Also when it's ridiculously delicious!)
