Hi, I'm new to this, I just recently started using my brain and energy to make great food, I tried to avoid it but now I realized you get what you put in. My daughter is allergic to all caesen and dairy and my hubby is a meat-free -tarian.
any ideas what i can do for OKRA????? was going to do fried okra, but seems to plain.

pickled okra
if you don't like the okra slime, dry fry it in a frying pan with garlic and miso.... slobber.... or indian style with only lemon juice as a liquid, no added liquid = no slime

If you have a copy of _Tropical Vegan Kitchen_, make the creamy callalloo soup. Its main ingredients are okra, spinach, and coconut milk, and it's seriously yummy!

Dry fry it Indian style. Slice it up, throw it in a pan with cumin seeds, onion, garlic, ground coriander, cayenne, top it off with some diced tomatoes at the end. Incredibly simple and packed with flavor.

You can coat it with a little oil and bake it, then dip it in ketchup like fries. It's how I started liking okra.

I love this recipe. I make it for potlucks but keep half for myself. I never tire of it. And when okra is in season...oh man.
2 tablespoons butter-like stuff 2 tablespoons grapeseed oil 1 large onion, diced 1.5 pounds okra, cut heads off and slice on the diagonal longways 3 ears fresh corn 1 28-ounce can whole plum tomatoes, broken up (save the juice from the can to add through the cooking process) Few tablespoons creole seasoning (see below)
Dry out the okra in a dry pan. This is to remove some of the sliminess. (There are tons of ways to remove the sliminess, and sometimes I've done multiple things because I hate slimy okra. Use your favourite method.) Heat butter and oil in a large pot over medium heat. Add onions, and cook ~5 minutes, until translucent. Add the corn and cook another 3 minutes. Add the okra, tomatoes, and Creole seasoning. Cover and cook over medium-ish heat for around 45 minutes, or until the okra has lost all of its "sliminess". Adjust seasoning with salt, pepper and more Creole seasoning if necessary. Cook uncovered for 10 minutes to reduce liquid if necessary.
Creole Seasoning 2 T onion powder 2 T garlic powder 2 T dried oregano 1 T dried thyme 1 T black pepper 1 T white pepper 1-2 T cayenne 4 T paprika 1 T - this mixture I have that includes celery seed, dulce flakes, ummm some other stuff. the key is the celery seed, and the rest is just bonus. :) This Creole seasoning is pretty awesome, and the recipe will make a lot, so you can use in future.
