I plan on roasting some broccoli.

Whole wheat fettuccine with spicy tomato sauce & meatless meat balls, focaccia with rosemary and cherry tomatoes, salad.

Last night, we had Pappardelle's porcini mushroom pasta tossed with a mushroom stock/red wine/shallot/EB reduction, grilled koshered herbed tofu, and seared green beans and spinach with cashews. I am psyched about having gone through more than half of the 2 pounds of spinach I bought at the farmers' market on Saturday.

Tonight, I am going out for vodka drinks and tapas, alongside my whole department (of 6 wonderful people). We are having an "off-site meeting," which means we're going to get drunk and kvetch about project managers!

Not sure, but we're going to the store tonight so I'm thinking about Daiya loaded nachos..

I'm thinking nachos or taco salad, or maybe chili.

you all are making me crave nachos and tacos now. ah ha ha!

boring.

we have only one piece of asparagus pie remaining. we could battle to the death for it, or i could make something. i have to pack for travel so it has to be quick and easy. maybe pizza. even so, an asparagus pie battle remains likely.

I was going to make cheesesteaks, but forgot to take the bread out of the freezer. Instead, I think I'll make some pasta with sun dried tomato & cashew cream sauce.

I made the chickpea picatta that Isa posted on the PPK blog. It was so delicious!

I was lucky enough to enjoy my second made for me homemade vegan meal tonight :) my boyfriends, dads, girlfriend made me roasted red peppers, cauliflower, carrots and heirloom beets, quinoa with parsley , tomatoes and lemon, pita and hummus as well as falafel :)

On Tuesday night, my boyfriends, best friends, aunt made an awesome meal for me. Red quinoa and orzo, roasted broccoli, cauliflower, brussel sprouts, and golden beets, yam fries, kale salad with radish, cabbage, cucumber with a lemon infused olive oil dressing!

I had no idea how much I liked beets! I want to eat them all the time!!!

Quick chana masala again. It's becoming one of my staples.

I think it'll be Snobby Joes. I have all the ingredients at home and, well, I love Snobby Joes.

Isa Pizza! Finally! Can't wait to try it...

Hopefully sweet potato & leek soup, with lashings of garlic. I think I'll blend it instead of leaving it chunky.

We're in one of those "OMG we have no money until ____" places, so I'm cooking from the pantry. I did have to buy a bag of onions for around a euro, though.

I'm making this sauce I made up when we had "nothing to eat" and it's become a staple around here. I'm mofo blogging about it at some point, but it has caramelized onions, garlic, spinach, sundried tomatoes, roasted red peppers, kidney beans, a bit of tomato sauce and then soy creamer. I usually serve it with pasta, but we have a thing of gnocchi to go through so I'm using that instead.

today's payday - and my spouse & i are going out to a vegan/veggie place (ipanema). i intend to get the potato swiss chard enchiladas (they can veganize everything that's veggie). w00t!
