I've made a stew that is similar to the Leek and Bean Cassoulet in the slow cooker and it turned out wonderfully. I don't have the book in front of me, but I'm pretty sure it would work. I could see the biscuits not cooking 100% but that wouldn't bother me at all.

hmm, I wouldn't do the biscuits in there, but I don't see why it wouldn't work with the rest.
