Hello! So I am about to replicate the "Lost Coconut Custard Pie" recipe and I was wondering if there are any serious tips on using the agar. I've made pies with it a handful of times and have had some great success and have had some so-so product to down right rubber-inspired consistency. Is there anything I should make[i][/i] sure to do when using the agar powder? (I use the powder not the flakes...because that's what I have!) Also any thoughts on adding 1-2 mashed ripened bananas to the filling? One other thing, it seems strange that there isn't any tofu involved...If anyone has made this before would tofu bring an improved consistency? Or would it just turn into any other tofu based dessert pie? Alright, well I am making it either tonight or tomorrow afternoon so reply if you can! Thanks

i'd recommend making this pie as written first and seeing how it turns out since you've had mixed results. Just make sure your agar is fully dissolved. that's really the only trick to it. powder is better than flakes in my opinion because it dissolves much more easily.

I've made this pie as is, with no issues, using agar powder.

I've also had mixed results with all things agar-based (I also use powder, since it's easier to dissolve), but there is nothing rubbery about this pie. It's great! I made it for Thanksgiving to share with my not-always-open-minded omni extended family, and everyone liked it except the people who aren't crazy about coconut anyway.

I made this pie without the agar but with more cornstarch and it worked out great.
