I made a persimmon smoothie (three very ripe persimmons and less than 1/2 cup soy milk) which was delicious but inexplicably turned into a thick, luscious pudding. Any explanations?   I'm experimenting with my backdrops in an effort to improve my food porn. Which backdrop do you prefer? Next up, a salad of grated apples, chopped parsley, fresh lemon juice, salt, pepper, sliced chili pepper, and a few segments of perfectly sweet/sour clementines.

I've never had a persimmon, but your pudding looks awesome and the salad looks super fresh and tasty.

persimmons are absolutely amazing blended up; they're just naturally thick and creamy.

yum! i love a good ripe persimmon but ive never blended one, it looks good.
giraffe, they are spicy and sweet, if ripe. an unripe one will pucker your mouth by sucking it instantly dry.

Thank you so much for the persimmon idea, that is so wonderful. I have never had persimmons and a wonderful neighbor gave me a dozen to ripen in my window. Now I can't wait to try this.

Persimmons eaten straight up taste super sweet. In Turkey they call them 'bal gibi' which means 'like honey'. But in a smoothie, they become incredibly creamy and almost have the texture of whipped cream (light and airy and luscious).
I feel that this pudding thing must have applications; the wheels are turning... Persimmon pudding as an egg replacer? It's been done in breads, maybe in cookies, but how about persimmon brownies/blondies? If I add more strongly flavored components (chocolate, pb, coffee) could the persimmon stand in for silken tofu? My instinct is yes, though I don't know how this pudding behaves when baked.

beautiful salad. persimmons are probably my current favorite fruit. i'm not sure they would stand a chance of lasting long enough for that parfait..
